With school slowly creeping back into the picture, a lot of us could use an easy back to school lunch idea. Skip out on buying lunch and swing by Main & Vine shop to get all the ingredients to these almond chicken lettuce wraps. I used their organic rotisserie chicken for this recipe. When making this wrap, try to use as much of the chicken breast as possible. White meat is always a healthier choice. The best part about this recipe is that there is no cooking required, just a little chopping that’s all! The almonds, grapes, celery, and onion give this wrap an incredible crunchiness that goes so perfectly with the creamy dressing. You can enjoy this wrapped in romaine lettuce, in between whole wheat bread, or even as a salad alone. It’s totally up to you!

 

 

Almond Chicken Lettuce WrapIngredients:

1/2 cup plain Greek yogurt

1/2 cup mayonnaise

2 tsp Dijon mustard

1 garlic clove, pressed

4 cups rotisserie chicken breast

1/3 cup toasted almonds

1/2 cup red onion

1/2 cup celery

1/2 cup red grapes

Salt & pepper to taste

6 romaine lettuce leaves

 

Instructions:

1 . In a small bowl combine Greek yogurt, mayonnaise, Dijon mustard, and garlic. Set aside.

2 . Cut the rotisserie chicken into small cubes. Try using as much of the breast before cutting into the dark meat.

3 . Roughly chop the almonds, onion, celery, and slice the grapes in half.

4 . Place all the chopped ingredients in a bowl and toss to combine.

5 . Add the dressing and mix it into the salad. Season with salt and pepper according to your liking.

6 . Fill each romaine lettuce leaf with the almond chicken salad. Serve chilled.
