Gingerbread Cake

what you need:

– 4 cups all-purpose flour – 1 tsp baking powder – 1 tsp baking soda – 1 tsp salt – 1/2 tsp ground cloves – 3 tsp ground cinnamon – 1 1/2 Tbsp ground ginger – 1 1/2 cup golden brown sugar – 3/4 cup unsalted butter melted – 3 eggs – 1 3/4 cups molasses – 2 cups buttermilk – 16 oz cream cheese softened – 1/2 cup unsalted butter softened – 2 tsp vanilla extract – 5 cups powdered sugar

STEP 1

In a large bowl, sift the flour, baking powder, baking soda, salt, ground cloves, ground cinnamon, and ground ginger.

In a separate bowl, mix the golden brown sugar and melted butter. Then mix in the eggs, unsulfured molasses, and buttermilk, and whisk thoroughly.

Now whisk in the dry ingredients and mix just until you don’t see any more patches of flour visible.

STEP 4

Preheat your oven to 350F. Line 3 (9-inch) baking pans with parchment paper and coat them with nonstick spray. Then split the cake batter between those pans. Bake them for about 30-35 minutes.

STEP 5

Remove the cakes from the oven and let them cool for about 10 minutes before transferring them to a cooling rack.

STEP 6

Make the frosting.  Add the room temperature cream cheese and softened butter to a large bowl. Use an electric hand mixer to beat them until they’re whipped and fluffy.

STEP 7

Add the vanilla extract and powdered sugar. Now mix everything at low speed until it is well incorporated and smooth.

STEP 8

Once the cakes have fully cooled, stack them with frosting in between each layer, leaving enough to frost the exterior of the cake as well. Serve chilled.
