Tortellini Soup

what you need:

– 2 Tbsp olive oil – 1 lb mild Italian sausage casing removed – 3 cloves garlic minced – 1 medium yellow onion diced – 1 tsp Italian seasoning – 1/2 tsp salt – 1/4 tsp black pepper – 1/4 cup all-purpose flour – 6 cups chicken broth – 8 oz tomato sauce – 9 oz refrigerated three cheese tortellini – 1 bunch kale stems removed and leaves chopped – 1/4 cup heavy cream

STEP 1

In a pot, add the olive oil and bring it to medium heat. Then remove the casing from the sausages and place them into the hot oil. Stir and break them up, cooking them fully.

Now add the minced garlic, chopped onion, Italian seasoning, salt, and pepper, mixing until the onion is translucent. Sprinkle in the flour and mix it for a few minutes.

Then add the chicken broth and tomato sauce, give it a quick stir, and bring the soup to a boil.

Now add the refrigerated tortellini and let them cook for about 5-7 minutes. Reduce the heat to a simmer

Stir for about 1-2 minute, then pour in the heavy cream and stir for an additional minute. Serve.
