Make the chicken rub by combining cumin, paprika, cayenne, black pepper, and salt.
Rinse the chicken and pat it dry. Rub the outside and inside of the chicken cavity with the grated garlic.
Evenly distribute the combined spices on the outside and inside of the chicken. Place it in a bowl covered with plastic wrap. Let the chicken marinate in the refrigerator for at least 4 hours.
Once the chicken is marinated, place the chicken stand onto a rimmed baking dish. Pour the white wine into the vertical chicken stand and place the chicken onto it.
Drizzle olive oil over the chicken and roast at 350 degrees Fahrenheit for 1 hour and 20 minutes or until the thickest part of the chicken thigh reaches 180 degrees Fahrenheit on an instant-read thermometer.
