  • Ingredients for the salad:
  • 5 oz arugula
  • 8-10 oz baby spinach
  • 1 1/2 fuji apple
  • 1/2 red onion
  • 2 cups pomegranate seeds
  • 1/2 cup feta cheese
  • 1/2 cup candied pecans
  • Ingredients for the dressing:
  • 3/4 cup olive oil
  • 1/2 cup balsamic vinegar
  • 2 tsp honey
  • Salt & pepper


  1. Combine olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl. Whisk it until well homogenized.
  2. Slice the red onion and apple.
  3. Arrange all of the ingredients into a large bowl. Then drizzle with the balsamic vinaigrette and mix . Eat fresh.
