Combine crisp topping ingredients

  • In a bowl, combine 1 1/2 cup flour, 1 1/2 cup old-fashioned oats, 1/2 tsp baking powder, 1/4 tsp cinnamon, a pinch of salt, and 1/2 tsp vanilla.
  • Add 3/4 cup cold cubed butter and 1/2 cup brown sugar and combine using a pastry cutter. Continue to cut through the dough until the butter is the size of peas.
  • Then mix in 3/4 cup chopped pecans. Then set it aside.
    Steps to make this Peach Crisp, including combining the topping ingredients, and cutting in the butter with a pastry cutter, and finally mixing in the pecans.
  • In a separate bowl, combine 9-10 sliced peaches, 1/3 cup brown sugar, 1 tbsp flour, 1/4 tsp cinnamon, 1 tsp vanilla, and 2 tbsp lemon juice.
    Steps to make this Peach Crisp, including adding the filling ingredients to the peaches and mixing together in a large bowl.
  • In the bottom of a 9x13 inch baking dish spread 2 tbsp of cut butter. Then add the peach mixture on top.
  • Spread the crisp over the peaches and lightly compress it. Bake at 365 degrees Fahrenheit for 45 minutes. Serve warm with vanilla ice cream.

Notes

  • Make it with fresh peaches- While you can use frozen or canned as well, this dish is best with the use of fresh peaches. They have the best flavor and texture, and are plentiful this time of year.
  • Use a pastry cutter- This tool is very helpful in cutting the butter into the sugar and other ingredients without melting it (like when you use your hands) while getting just the right size.
  • Don't skip the butter on the bottom- Adding butter to the baking dish before the peaches will keep them from sticking and burning, making them hard to get out to serve.
  • Press the topping down- As the oat topping dries from baking, it will break off easily from the peaches. Pressing lightly will help it adhere to the top of your Peach Crisp.
