Using the dough hook attachment, mix until the dough no longer sticks to the sides of the mixer bowl. It should have a smooth, tacky, and elastic look to it when it's done kneading. Depending on the flour you use, you may need to add more.
Transfer the dough to a bowl greased with olive oil and cover it with plastic wrap. Let the dough rise for about 1 hour or until it doubles in size.
Once the dough is done rising, divide it into 2 equal pieces. This will make 2 large pizzas.
At this point, you could do 1 of 2 things. You can wrap the dough in plastic wrap and freeze it for later or roll it out onto 2 pizza pans and let it rise again for about 30 minutes before adding pizza toppings and baking. I usually bake my pizza in a preheated 475-degree oven for about 10-15 minutes.
Notes
This recipe makes 2 pizzas. If you only need to make one, tightly wrap half the dough in plastic wrap right after it's done mixing and place it in the freezer.
Add more flour- Depending on the flour you use, you may need to add more if the dough is too wet or sticky. It should just be tacky.
Grease the bowl- Make sure to grease the bowl that the dough rises in so that it doesn't stick to it, losing some of your dough.
Cover it with plastic wrap- Keeping the air by the dough warm will help it rise.
Make a double batch- If your family loves making pizza, double your batch and store the extra in the freezer.
