The Peach French Toast is just what you want for a decadent but easy breakfast your family will love. An infused rum and peach syrup are just what you need to top this delightful breakfast creation.
Remove the seed from each peach and slice into 8 equal slices.
In a pan, add 3/4 cup sugar and 1/2 cup water. Stir just to evenly combine and let it caramelize over medium heat for 8 minutes. Make sure not to stir while the sugar is caramelizing, but instead occasionally lift the pan with one hand and swirl it around to ensure even browning.
Once the sugar has browned, add in the butter and rum. Stir for about 1 minute on low heat and add in the peaches. Let the peaches soften in the warm syrup for about 3 more minutes.
Combine 3/4 cup sugar and 1 Tbsp cinnamon with a fork in a shallow dish or plate. Set aside for later.
Whisk together the eggs and milk in a deep dish.
Dip each slice of the bread in the egg mixture and fry on a greased pan over medium heat. Fry the toast until golden brown on each side.
Lightly dredge each fried toast in the cinnamon sugar mixture. Then pour your desired amount of peach syrup over the toast. Add a dollop of Creme Fraiche. If you don't want to use Creme Fraiche, whipped cream works too.
Notes

Use deep dishes for dipping- You want to get a good coating of the egg mixture on each slice of bread, so use a deep enough dish.
Combine the cinnamon and sugar ahead of time- Don't sprinkle them on separately, but instead premix them so your French Toast gets the perfect combination and coating of each.
Add the cinnamon sugar while the French toast is warm- While it's still warm, the surface is moist and steamy, making it easy for the sugar mixture to adhere to it.
