Ingredients

  • 8 Eggs
  • 1/4 cup Half & half
  • 1/2 tsp Salt
  • 1/8 tsp Black pepper
  • 6 English muffins
  • 4 Tbsp unsalted melted butter divided
  • 6 Cheddar cheese sliced
  • Meats of choice Bacon, Canadian bacon, or sausage Patties

Instructions

  • In a large bowl add 8 eggs along with 1/4 cup of half & half, 1/2 tsp of salt, and 1/8 tsp of black pepper. Use a whisk to thoroughly mix the eggs.
  • Butter the bottom and sides of a 9 x 13“ baking dish with 1 tbsp melted butter. I used a pastry brush for this step to make it easier to spread.
  • Now preheat your oven to 350°F and bake for about 18 minutes or until the eggs are set in fully cooked.
  • Once the eggs are fully cooked, use a 3-inch round cookie cutter to cut out the eggs for the breakfast sandwich.
  • In the meantime, slice 6 English muffins in halves, then place them on a rimmed baking sheet cut side up.
  • Melt the remaining 3 Tbsp butter and brush it on top of the sliced English muffins. Then broil for about 2-3 minutes or until lightly golden and toasted. Keep a close eye on them so they don’t burn.
  • Begin assembling the breakfast sandwiches starting with the bottom half of English muffin, then place one slice of cheddar cheese on top, then place your choice of meat (bacon, sausage patty, or Canadian bacon), then the top slice of English muffin.
  • if you plan to eat them right away, warm the sandwiches in the oven at 300 degrees for about 5-8 minutes to melt the cheese. Or you can just microwave however many you want to enjoy. To freeze, wrap each sandwich in parchment paper then wrap them in foil and place them in a gallon-sized Ziploc bag to maintain freshness.

Notes

How to reheat frozen breakfast sandwiches
  • From thawed - Reheat the thawed breakfast sandwich by placing it on a microwave-safe plate, wrapped in a paper towel. Heat it in the microwave for about a minute, or until it is hot.
  • From frozen - Warm the frozen homemade sandwich by removing the foil, wrapping it in a paper towel, and placing it on a microwave-safe plate. Defrost it in the microwave for about 1 minute 30 seconds. Then, flip it over and heat it for another minute, or until hot.
