Ingredients

  • 2 lb large raw shrimp peeled and deveined
  • 4 tbsp olive oil divided
  • Fajitas seasoning
  • 1 garlic clove
  • Juice of 1 lime
  • 1 red pepper
  • 1 green pepper
  • 1 yellow onion

Instructions

  • Start off by adding 2 pounds of large raw shrimp into a bowl, along with 2 tablespoons olive oil and 1 packet (or 2 tablespoons) or your favorite fajita seasoning. Then add 1 pressed garlic clove, and the juice of 1 lime. Mix everything together well. Tip: you can cook the shrimp right away or let them marinate for a few hours for more flavor.
  • Bring a large pan to medium-high heat. Then add in the shrimp and cook them until they are pink or opaque. Then remove the cooked shrimp and set them aside for later.
  • In the same pan, add 2 tablespoons of olive oil and cook 1 sliced yellow onion for about 4-5 minutes.
  • Then bring the heat to high and add 1 sliced red bell pepper and 1 sliced green bell pepper. Cook for about 3-4 minutes or until crisp but tender. Careful not to overlook the peppers.
  • Then add the shrimp back in and stir for about 1 minute.
  • Serve into warm flour tortillas with a dollop of sour cream.
