  • In a small bowl whisk together 1/2 cup kewpie Japanese mayonnaise, 1 1/2 Tablespoons sriracha, and 1 tsp fresh lime juice. Do not skip the like juice. It’s a very important flavor booster.
  • Once everything is well combined, cover the bowl with plastic wrap and keep it refrigerated until ready to use on sushi.

Notes

  • Use fresh limes- Fresh lime juice has a much better flavor than concentrate. It's also more potent, so I suggest using freshly squeezed lime juice if possible.
  • Adjust the spice level- If you prefer this spicy sauce to not be too spicy, decrease the amount of Sriracha. You can do the opposite if you like it hot.
  • Make a double batch- This spicy mayo recipe is easy to double or even triple. It's so tasty that it will go fast, so make some extra so it's always at the ready.
