Start off by adding 2 pounds of large raw shrimp into a bowl, along with 2 tablespoons olive oil and 1 packet (or 2 tablespoons) or your favorite fajita seasoning. Then add 1 pressed garlic clove, and the juice of 1 lime. Mix everything together well. Tip: you can cook the shrimp right away or let them marinate for a few hours for more flavor.
Bring a large pan to medium-high heat. Then add in the shrimp and cook them until they are pink or opaque. Then remove the cooked shrimp and set them aside for later.
In the same pan, add 2 tablespoons of olive oil and cook 1 sliced yellow onion for about 4-5 minutes.
Then bring the heat to high and add 1 sliced red bell pepper and 1 sliced green bell pepper. Cook for about 3-4 minutes or until crisp but tender. Careful not to overlook the peppers.
Then add the shrimp back in and stir for about 1 minute.
Serve into warm flour tortillas with a dollop of sour cream.
