Then evenly distribute the spice rub over the chicken as well. Close the bag and massage the spices and oil into the chicken. Let it marinate for at least 2 hours or overnight in the fridge.
Now add hickory pellets to your smoker and heat it to 225 degrees Fahrenheit and place the marinated chicken wings directly onto the grill grates. Cook the wings for about 2 hours or until the internal temperature of the chicken is at least 165 degrees Fahrenheit. Note: if you were using whole wings it will take about 3-4 hours to fully cook. Remove the chicken wings off the grill and enjoy with your favorite barbecue sauce.
