– 3/4 cup unsalted butter softened – 3/4 cup brown sugar – 1 teaspoon vanilla extract – 1 large egg + 1 large egg yolk – 3 cups blanched almond flour – 1/2 teaspoon baking soda – 1/2 teaspoon salt – 1 1/4 cups semisweet chocolate chips
Beat the butter and sugar. In a large bowl, combine the softened butter and the brown sugar, beating them with an electric hand mixer.
Add the vanilla and eggs. Now add in the vanilla, egg, and egg yolk. Mix together on medium-high.
Sift in the dry ingredients. With a fine-mesh sieve over the bowl, add the almond flour, baking soda, and salt. Sift them into the wet ingredients and mix with a spatula.
Add the chocolate chips and mix everything together. Preheat the oven. Line a baking sheet with parchment paper and preheat the oven to 350 degrees Fahrenheit.
Scoop out the dough. Using a trigger-release cookie scoop, scoop out the dough and round it into balls with your hands. Then place them on the baking sheet with a few extra chocolate chips on top for a more appealing look.
Bake these almond flour chocolate chip cookies for 10-12 minutes. Let them cool on the pan for a few minutes before gently transferring them to a cooling rack.
