Berry Chantilly Cake

This berry chantilly cake is loaded with 4 different berries, sweet mascarpone cream cheese frosting, and 4 fluffy vanilla cake layers.

How to make Chantilly Cake

Beat the eggs and sugar. Add vanilla. Sift in the flour, cornstarch, and baking powder and fold it into the egg mixture.

Bake for 20 minutes at 350 degrees Fahrenheit.

How to make the frosting

Whisk softened cream cheese, mascarpone, powdered sugar, almond extract, and vanilla. In another bowl, beat the cold heavy cream until you can see stiff peaks. Combine the two.

How to make simple syrup

Whisk sugar and water in a saucepan and bring it to a boil. Then drop the heat to low and let the simple syrup simmer for about 15 to 20 minutes and then cool.

How to assemble the cake

Slice each vanilla cake in two & drizzle the simple syrup over each layer. Spread Chantilly cream over it and spread some berries. Repeat.
