This Wild Rice Recipe is a flavorful and simple side that will complement any dish you serve at your holiday table. A tender seasoned rice blend with cranberries and pecans, it’s utterly delicious.

– 4 Tbsp unsalted butter – 3 shallots minced – 1 medium carrot – 1 stick celery – 2 cups wild rice blend – 1/2 cup dried cranberries – 1/4 tsp dried thyme – 1 tsp salt plus more, to taste – 1/8 tsp Black pepper – 4 cups chicken broth – 1/2 cup pecans toasted and coarsely chopped – 1/4 cup fresh parsley garnish

Sauté the vegetables.

In a heavy-bottomed pot, melt the butter over medium-high heat. Then add the minced shallots, chopped celery, and diced carrot. Sauté until the shallots become translucent, about 2 to 3 minutes.

Add the wild rice.

Now add the wild rice blend and stir until the grains are well coated, about 3 minutes.

Add cranberries and seasonings.

Then stir in the dried cranberries, dried thyme, salt, and black pepper. Stir for 1 minute.

Stir in broth and simmer.

Pour in the chicken broth and bring the rice to a boil. Then drop the heat to medium-low and let the rice simmer (covered) for about 40-45 minutes.

Add pecans and parsley.

Once the liquids have been absorbed and the rice is tender, stir in the chopped toasted pecans and garnish with freshly chopped parsley (optional).
