- 4 Tbsp olive oil
- 1/2 tsp salt
- 1/8 tsp black pepper
- 1 tsp Italian seasoning
- 1 large garlic clove pressed
- 4 chicken Sausage (1 lb)
- 2 cups Sweet potatoes diced small
- 2 cups Broccoli florets
- 1 Red pepper cubed
- 1 large zucchini or 2 small
- 1 small Red onion
In a small bowl, combine the olive oil, salt, pepper, Italian seasoning, and one pressed garlic clove. Then set aside. Slice and chop all of the vegetables and sausage and place them into a large bowl.
Pour the herbed oil over the vegetables and toss to combine everything together.
Line a baking sheet with parchment paper and evenly distribute all of the seasoned vegetables and sausage in a single layer. Preheat your oven to 400 degrees Fahrenheit and roast for 20-25 minutes.
