  • Prepare the Bang Bang Sauce: In a medium bowl, combine the mayonnaise, sweet chili sauce, sriracha, and lime juice. Stir until smooth and well blended. Set aside or cover and refrigerate if using for later.
    Steps to make Bang Bang Chicken Skewers: whisk the mayo, sweet chili sauce, sriracha, and lime juice together.
  • Cut the chicken thighs into roughly 1-inch cubes and place them into a large mixing bowl.
  • Add olive oil, salt, paprika, garlic powder, and black pepper. Mix well until all pieces are evenly coated. Tip: for better flavor, let the chicken marinate for 1-2 hours before skewering.
    Steps to make Bang Bang Chicken Skewers: cube the chicken and combine it with oil, salt, pepper, paprika, and garlic powder.
  • Soak the wooden skewers in water for about 10-15 minutes to prevent burning on the grill.
  • Thread the seasoned chicken pieces onto the soaked skewers, spacing them evenly but close enough so they cook uniformly. Leave a little room at the end of each skewer for easy handling.
  • Heat your grill to medium-high heat. Oil the grates lightly to prevent sticking. Place the skewers on the hot grill. Cook for about 4–5 minutes on the first side.
  • Flip the skewers and grill for another 4–5 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is nicely charred.
  • During the last minute of grilling, brush a generous layer of the Bang Bang sauce onto the chicken skewers. Let it sizzle and slightly caramelize, then remove from the grill.
  • Transfer the skewers on a serving platter. Drizzle with extra Bang Bang sauce if desired, and sprinkle with sliced green onions. Serve hot!
