These grilled Bang Bang Chicken Skewersare tender and juicy. They're brushed with a creamy sauce that is sweet and spicy, making this dish absolutely delicious.
Prepare the Bang Bang Sauce: In a medium bowl, combine the mayonnaise, sweet chili sauce, sriracha, and lime juice. Stir until smooth and well blended. Set aside or cover and refrigerate if using for later.
Cut the chicken thighs into roughly 1-inch cubes and place them into a large mixing bowl.
Add olive oil, salt, paprika, garlic powder, and black pepper. Mix well until all pieces are evenly coated. Tip: for better flavor, let the chicken marinate for 1-2 hours before skewering.
Soak the wooden skewers in water for about 10-15 minutes to prevent burning on the grill.
Thread the seasoned chicken pieces onto the soaked skewers, spacing them evenly but close enough so they cook uniformly. Leave a little room at the end of each skewer for easy handling.
