These delicious Chicken Shawarma Bowls are full of seasoned meat, crispy and juicy veggies, and crumbly feta cheese, topped with a creamy, tangy tzatziki yogurt sauce.

Ingredients

For the chicken marinade

For the pita and toppings

  • Mini pita bread
  • romaine lettuce chopped
  • red onion chopped
  • tomatoes sliced,
  • cucumber sliced
  • Greek yogurt sauce or tzatziki
  • Feta cheese crumbled

Instructions

  • Place all of the chicken marinade ingredients into a large bowl.
  • Use a whisk to mix everything together well.
  • Now, add in the chicken thighs and use your clean hands to mix the marinate into the chicken.
  • Let it marinate for about 1-2 hours or even better, let it marinate (covered) in the fridge overnight.
    Steps to make Chicken Shawarma Bowls: Add salt, olive oil, pepper, cumin, paprika, coriander, cayenne pepper, garlic, and Greek yogurt to a bowl, mix in the chicken, and marinate.
  • Heat the grill to medium-high (about 400 degrees F). Clean and oil the grill grates.
  • Grill the chicken for about 5-7 minutes per side. Internal temperature of the chicken should reach 165 ºF. Let is rest for about 5 minutes. Then chop the chicken into bite size pieces and serve it on a bed of chopped romaine lettuce and add toppings like red onion, tomatoes, cucumber, greek yogurt sauce/Tzaziki, feta cheese, and mini pita bread.
