Pulse on high speed a few times until everything is smooth and creamy.
Add the chipotle mayonnaise to a bowl of shredded cooked chicken.
Mix everything together thoroughly.
Evenly distribute the chicken mixture on half of the slices of bread.
Then add the sliced avocado on top, along with the shredded Colby jack cheese.
Top it with the other halves of sliced bread (Mayo side down).
Now bring a pan over medium-high heat and add the butter in.
Once the butter is hot and melted, place the chipotle chicken sandwich and toast the bread for about 3-4 minutes per side or until golden brown and the cheese is melted. Serve and enjoy!
