  • Cut up 1 red bell pepper, 2 small yellow zucchini squash, 1 zucchini, 1/2 a medium onion, and 1 cup of broccoli into similar sized chunks.
  • Add the sliced vegetables into a large bowl and toss them with 1 tablespoon of olive oil, 1/2 teaspoon salt, 1/2 teaspoon garlic powder, and 1/8 teaspoon black pepper.
  • Once the veggies a coated in the oil and seasoning, place them onto the bottom of your air fryer basket and roast for 10-12 minutes at 400 degrees Fahrenheit.
    Steps to make Roasted Air Fryer Vegetables: cut the vegetables to a uniform size and place in a bowl, then mix in the oil, garlic powder, salt, and pepper, then place in an air fryer basket and cook.

Notes

  • Preheat the air fryer- Make sure the air fryer is preheated so that it is hot when the veggies go in. Otherwise they will steam and not crisp up.
  • Cut the vegetables to a uniform size- If some are too big, they will cook slower and land up undercooked. Smaller pieces can burn. So keep everything about the same size.
  • Coat them with oil- The oil on the vegetables not only helps the seasonings stick, but it also ensures that the vegetables get really crispy.
  • Don't overcrowd the basket- Too many things in the air fryer basket blocks the hot air circulating, so only some of the vegetables will get crispy. Keep them to one even layer.
