These Roasted Yukon Gold Potatoesare perfectly tender and lightly seasoned with garlic, salt, and pepper. This easy-to-make side dish goes with everything!
Wash and dry your potatoes. Then slice them into halves
Place them on a large baking sheet and season them with olive oil, salt, pepper, and garlic powder. Use your hands to thoroughly mix the spices and oil with the potatoes. Tip: line your baking sheet with foil for easy cleanup. Tip: for extra nutty flavor try using half olive oil and half sunflower oil. I love to get mine from my local European grocery store.
Then flip all of the potatoes cut side down in a single layer.
Preheat your oven to 400°F and roast for about 45 to 55 minutes or until fork-tender, and crispy golden on the outside. You don't really need to flip them during baking but if your potato bottoms are not crispy enough, you can flip them and crisp them up a little extra at the end of baking.
Notes
Dry the potatoes thoroughly- Make sure you dab the potatoes with a paper towel before oiling and seasoning them to make sure they are nice and dry, to better their chances of crisping up.
Thoroughly cover the potatoes with seasonings- Use your hands to thoroughly toss the potatoes with the spices and oil.
Use a little extra oil- Oil is the magic ingredient when making extra crispy air fryer potatoes. Add a little bit more for some super crispy results.
