Ingredients
Combine the egg mixture. In a large bowl, add the eggs, half & half, salt, and pepper. Use a whisk to thoroughly combine.
Bake it. Butter the bottom and sides of a 9 x 13“ baking dish with melted butter and preheat the oven to 350°F. Bake for about 18 minutes, or until the eggs are fully cooked.
Cut them out. Cut out the eggs in 3-inch circles. I used this biscuit cutter.
Prep the English muffins. In the meantime, slice 6 English muffins in half, then place them on a rimmed baking sheet, cut side up. Brush melted butter on top of them. Then broil them for about 2-3 minutes, or until lightly golden and toasted.
Assemble. Lay the bottom half of the English muffins down, then place one slice of cheddar cheese on top, then your choice of meat, and finally the top slice of the English muffin.
Melt the cheese. Warm the sandwiches in the oven at 300 degrees Fahrenheit for about 5-8 minutes to melt the cheese. Or you can just microwave however many you want to enjoy.
