Ingredients

  • 2 lb large shrimp peeled, deveined and tails on
  • 2 Tbsp freshly squeezed lemon juice
  • 2 Tbsp white wine
  • 5 Tbsp melted unsalted butter divided
  • 4 cloves garlic minced
  • 1 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp crushed red pepper flakes or to taste
  • 1/3 cup Panko breadcrumbs
  • 1/4 cup chopped Italian parsley

Instructions

  • In a large bowl, add the shrimp, lemon juice, 3 Tbsp melted butter, minced garlic, salt, pepper, and red pepper flakes.
  • Use a spoon to mix everything together well. Set aside.
    Steps to make Baked Shrimp Scampi: mix the shrimp, butter, lemon juice, garlic, salt, pepper, and red chili flakes together with a spoon in a bowl.
  • In a separate bowl, combine the panko bread crumbs, chopped parsley, 2 Tbsp melted butter, and a pinch of red pepper flakes for extra heat. Note: the extra pepper flakes are optional.
    Steps to make Baked Shrimp Scampi: combine the parsley, butter, red chili flakes, and breadcrumbs together in a bowl.
  • Now arrange the shrimp in a single layer between 2 gratin dishes or 1 (9x13) inch baking dish.
  • Then add the bread crumbs mixture on top.
  • Bake in the oven at 425 degrees Fahrenheit for about 12 minutes. Then broil at the end for about 2 minutes to crisp up the top. Keep a close eye and be careful not to burn the top.
    Steps to make Baked Shrimp Scampi: layer the shrimp in a baking dish, then top with breadcrumb mixture and bake.

Notes

  • Add extra heat- Add extra red pepper flakes to the breadcrumbs to make this Baked Shrimp Scampi a little spicier.
  • Lay the shrimp in a single layer- You want to make sure that the shrimp fully cook, so lay them out in one layer. Piling them on each other will make heat circulation difficult and slow down cooking.
  • Don't let the top burn- While broiling the baked shrimp scampi, keep a close eye on it and be careful not to burn the top.
