Strawberry Puree (for drinks)
This Strawberry Puree is sweet, tart, and perfect for using in drinks. Use this delicious puree to make fantastic beverages that will refresh you all summer long!

1 pound fresh strawberries hulled and quartered 1/2 cup granulated sugar 1 Tbsp water
Add the strawberries, sugar, and water to a small saucepan. Note: you can use frozen strawberries if you don’t have fresh ones.
Cook over medium heat for 6–8 minutes, stirring occasionally, until the strawberries soften and release their juices.
Remove from the heat and let cool slightly. Transfer the mixture to a blender and blend until smooth. Just a few pulses gets the job done.
Optional: For an ultra-smooth puree, strain through a fine mesh sieve if desired. Chill completely before using.
The puree will thicken slightly as it cools.
Add more sugar if your strawberries are tart or out of season.
Store in the refrigerator for up to 1 week.
