Prime Rib Roast Recipe

  • 4 1/2- 5 lb. beef rib eye roast bone-in
  • 1 tbsp chopped oregano
  • 1 tbsp chopped rosemary
  • 1 tbsp chopped thyme
  • 5 garlic cloves (grated or pressed)
  • 2 tbsp olive oil
  • Salt and pepper to taste


Make the garlic herb spread

  • Finely chop fresh oregano, rosemary, and thyme. Then grate the garlic.
  • Place the herbs and garlic in a bowl and add in the olive oil. Mix all the ingredients together using a fork.

Season and smother the beef, then roast in the oven

  • Generously season the beef with salt and pepper and rub the herb mixture on top.
  • Place into a roasting pan and bake at 500 degrees Fahrenheit for 30 minutes, then lower the temperature to 415 degrees Fahrenheit and cook for 1 more hour. I personally don't like rare meat so I cook it just until the pink is almost gone (about 145-150 degrees Fahrenheit using a meat thermometer). But if you prefer medium-rare meat, cook the beef until it reaches 135-140 degrees Fahrenheit.
