What You’ll Need

Ingredient Notes
- Mushrooms- We’re using Baby Bella mushrooms for this recipe, aka cremini mushrooms. These are meaty and satisfying with great flavor.
- Butter- I used unsalted butter since I’m salting the mushrooms to taste.
- Garlic- Fresh cloves are going to give you the best flavor, but pre-minced garlic from the store works well, too.
- White wine- The white wine adds complex flavor and the alcohol cooks out so it’s ideal for this recipe.
- Fresh herbs- Using fresh thyme and parsley really levels up a dish, so grab these from the store or garden if you can. Dried can be used if you don’t have any fresh ones.
Add-ins and Substitutions
- Use different mushrooms– Besides cremini, you can also use white button mushrooms or chopped up portobella mushrooms.
- Substitute the wine- You can use wine or chicken broth if you prefer. The alcohol cooks out, but if you don’t have wine or rather not use it, broth will work here, too.
- Add other flavors- You can sprinkle the mushrooms with grated parmesan cheese or use fresh rosemary along with the thyme.
How to Make Garlic Butter Mushrooms
- Cook the mushrooms. Heat a large skillet over medium-high heat. Add the olive oil and mushrooms. Spread them into a single layer and cook undisturbed for 4–5 minutes until golden on one side. Stir and continue cooking another 4–5 minutes until browned and tender.
- Add the other ingredients (minus the wine). Bring the the heat down to medium. Add the butter, garlic, thyme, salt, and pepper. Cook for 1–2 minutes, stirring frequently, until the garlic becomes fragrant.
- Add the wine and simmer. Stir in the white wine or broth and let it simmer for about 30 seconds. Garnish with freshly chopped parsley and serve warm.
Pro Tip: Let the wine simmer with the mushrooms for just a bit to allow the alcohol to cook out but the flavor to remain.

Recipe Tips
- Cook the mushrooms in a single layer- In order to brown them, they need to make contact with the pan, so make sure you don’t overload it and they cook in one layer.
- Season to taste- We used unsalted butter so you could add the amount of salt and pepper that you like. Taste the butter sauce to make sure it is to your liking.
- Add the wine last- The flavor of the wine will lessen as it cooks, so add it at the end and only simmer for 30 seconds to allow the alcohol time to evaporate.
FAQs
You want to saute the mushrooms first and then add the garlic near the end. The mushrooms will release moisture that can be used to keep the garlic from burning, which can happen quickly as they cook fast.
Use a combination of both oil and butter. A high-smoke-point oil like olive oil will help the mushrooms brown and then the butter adds flavor and moisture once the browning has completed.
