This one is for all my healthy peeps. It’s got healthy written all over it. Its really quick to put together, which makes it a perfect salad for a weeknight dinner. The salad dressing is what makes a salad taste so good. I have a great cilantro lime dressing linked in the list of ingredients. If you don’t have smoked salmon, you can use grilled or pan fried instead. Iv’e actually had this salad without any salmon, and it still tasted so delicious. I’m telling you, the dressing is the star of the salad.
Ingredients:
3 cups mixed baby greens (or any kind of spring mix)
1/4 cup red onion, chopped
1/2 cucumber
1 cup cherry tomatoes
4-5 oz smoked salmon
Instructions:
1. Chop up the red onion and cucumber.
2. Arrange the baby greens, smoked salmon, cherry tomatoes, and red onion onto a plate. (You can put your desired amount of each ingredient).
3. Drizzle the cilantro lime dressing over the salad to your liking.
