For the best air fryer sweet potato fries, you’ll need a Sweet potato, Avocado oil, Salt, Pepper, Onion powder, Garlic powder, Smoked paprika, and Tapioca flour or Cornstarch.

- Cut the sweet potato. Rinse the sweet potato and pat it dry with paper towels, getting it as dry as possible. Then cut it into your desired fry size (mine were about 1/4-1/2-inch thick).
- Make the seasoning mix. In a small bowl, mix the garlic powder, onion powder, paprika, salt, pepper, and tapioca flour together.

Ingredients
- 1 sweet potato
- 2 tbsp avocado oil
- 3/4 tsp salt
- 1/8 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp smoked paprika
- 3 tbsp tapioca flour or cornstarch
Instructions
- In a small bowl combine 3/4 tsp salt, 1/8 tsp black pepper, 1/2 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp smoked paprika, and 3 tbsp tapioca flour or cornstarch. Set aside.
- Rinse and pat your sweet potatoes dry using paper towels. Try to get as much moisture out as possible.
- Now cut the sweet potatoes into your desired fry size. Mine were about 1/4-1/2 inch thick.

I have found that microwaving potatoes until almost fully cooked, drying coating then air frying for about 5 minutes render them crispier and softer on the inside.
