Summer is grilling season and I absolutely love a fresh grilled Ribeye Steak for dinner. This is one of my favorite cuts of beef and grilling it gives it amazing texture. This is a great dish to serve for backyard barbecues and it goes with just about every side dish you can think of. The recipe works with a gas grill or charcoal grill.
- TASTE: This steak has lots of garlicky flavor. It’s savory with some hints of salt and peppery heat.
- TEXTURE: The ribeye is so juicy and the crust has a little crunch to it. With a combination of meat and fat, this cut is perfectly tender.
- TIME: This recipe takes about 15 minutes from start to finish.
- EASE: This dish is quick, easy, and uses only a few ingredients. It’s perfect for a no-fuss grill night.
What You’ll Need
Ingredient Notes
- Bone-in ribeye steak- This cut of beef has marbling that adds rich flavor and is very tender and juicy.
- Olive oil- This helps the steak get a crisp outer layer as it grills.
- Garlic- Fresh cloves add great flavor to this steak. Garlic powder can be used instead, but it doesn’t have quite as much flavor.
- Seasonings- Salt and Black pepper
Add-ins and Substitutions
- Add different seasonings or herbs- Make this with lemon pepper seasoning, ancho chili powder, white pepper, Montreal seasoning, or paprika. Or add some fresh thyme and rosemary.
- Substitute another cut of steak- You can make this recipe with different cuts, but keep in mind that the thickness of the meat will affect how long you need to cook it.
- Add butter- Substitute the oil with butter, or split it half and half, to add a richer flavor.
- Add onions- Top this steak with some thinly sliced onions or even shallots for an extra pop of flavor.
How to Make Grilled Ribeye Steak
- Bring the steak to room temp. Allow the steaks to come to room temperature.
- Oil and season the steaks. Now drizzle the olive oil over both side sides of the steak and spread the pressed garlic all over. Then generously season with salt and pepper.
- Grill it. Preheat your grill to 450-500 degrees Fahrenheit. Grill the steak for about 3-4 minutes on each side. Check the internal temperature with an instant-read thermometer to gauge doneness.
- Let it rest. Once the steak is done, transfer it to a plate and cover it with foil to let it rest for about 5 minutes. Then slice and serve.
Pro Tip: My family likes steak to be medium to medium rare, so about 135-140 degrees Fahrenheit internally. Cook the steak more or less depending on your preference.
Recipe Tips
- Don’t cook cold steaks- Make sure the steak have come to room temperature before putting it on the grill or it will not cook evenly.
- Season the steak thoroughly- When adding the oil, garlic, salt, and pepper, make sure you add it to the top, bottom, and sides of the steak for flavor in every bite.
- Check the internal temp with a thermometer- Use an instant-read thermometer to check the internal temperature of the steak for an accurate way to see if it is done.
- Don’t forget to rest it- It’s very important to let the steak rest after you remove it from the heat. If you cut it right away, the juices will leak out, leaving it drier. Resting lets them reabsorb.
FAQs
Marinating ribeye can add more flavor and tenderize the meat, but because ribeye is already a tender cut of meat, it is not necessary. Over-tenderizing it can make it hard to get a good crust while grilling, so be careful when mariinating.
Because times will vary based on temperature and thickness of your ribeye, it’s best to see if your steak is done by its internal temperature using a meat thermometer in the thickest part of the steak. Medium rare is about 140 degrees Fahrenheit, Medium is 145 degrees Fahrenheit, and Medium well is 150 degrees Fahrenheit.
